Creamy Avocado Spaghetti Squash Pasta + How To Roast Spaghetti Squash — Oh She Glows
Spaghetti Squash has been my go-to during these carb craving months. During weeks 4-7 I couldn’t look at any chicken, beef, salmon, turkey, and couldn’t bare to look at a vegetable. All I wanted was pasta + cheese, and bagels. This simple recipe from Oh She Glows, ( a favourite innovator and genius in the kitchen!) provides a satisfying pasta alternative with a ton of modifications that I used, or dreamt up. I added chopped spinach, or blended greens into the avocado cream sauce, added chia + hemp at times, used tomato sauce or created a pesto with almonds and kale as some hidden nutrients. Either on it’s own, or with some add ons, this recipe is an amazing go-to!
